List Apollo contact stages.
apollo.listContactStages returns stages available to saved contacts.

{ account } defaults to the project’s Apollo binding. Returns ApolloStage[] with id, name, displayName, displayOrder, and optional category, meeting, and team metadata. Use id in later mutations to skip name lookup.
